Antonello Sardi was born as a self-taught cook in Florentine kitchens, and after 2 years of experience at the Fuor d'Acqua Restaurant in San Frediano, a historic Florentine district, he arrives at Devero in Milan with the multi-starred Chef Enrico Bartolini, with whom he he moved to the Perillà restaurant in Val d'Orcia, where his career as a Chef officially began.
In 2013 he arrived at the Bottega del Buon Caffè in Florence, where he became Executive Chef and reached the coveted milestone of the first star in the 2015 MICHELIN Guide.
At the beginning of 2019, the meeting with Christian and Valentina allows him to undertake a new ambitious project in Mugello, where at the Tenuta Le Tre Virtù he takes over the leadership of the Virtuoso Gourmet restaurant to regain the star in the MICHELIN Italy 2020 Guide and confirm it in 2021. together with the coveted recognition of the green star for Sustainable Gastronomy.
Immersion in nature, passion and bond with the territory enhance his cuisine: raw materials selected from small producers of excellence in Mugello and beyond, e many self-produced ingredients in the garden and on the organic farm of the Estate.
